Filipino Shrimp Curry
Filipino Shrimp Curry is a gently spiced coconut curry with tender shrimp and colorful peppers.

Ingredients for Filipino Shrimp Curry
- 1 lb shrimp, deveined, heads and shells removed
- 1 Knorr Shrimp Cube
- 1 small red bell pepper, chopped
- 1 small green bell pepper, chopped
- 1 medium ripe tomato, chopped
- Juice of 1/2 lemon or 2 calamansi
- 2 cups coconut milk
- 1/4 cup chopped parsley
- 1 thumb-sized piece ginger, minced
- 1 medium yellow onion, minced
- 4 garlic cloves, crushed and minced
- 1 1/2 to 2 tbsp patis (fish sauce)
- 1 tbsp curry powder
- 1/2 tsp turmeric powder
- 1/4 tsp ground black pepper
- 1/4 to 1/2 tsp cayenne pepper powder
- 3 tbsp cooking oil
How to cook Filipino Shrimp Curry
- 1.Toss shrimp with lemon or calamansi juice, black pepper, and cayenne; marinate for 10 minutes.
- 2.Heat oil in a pot; sauté onion for 30 seconds, then add garlic, ginger, and tomato and cook until onion is tender.
- 3.Add coconut milk, bring to a boil, cover, and cook over medium heat for 2 minutes.
- 4.Stir in curry powder and Shrimp Cube; cook 2 minutes.
- 5.Add turmeric and bell peppers, cover, and cook 3 minutes.
- 6.Add shrimp and cook 3 to 4 minutes until opaque; season with patis, stir in parsley, and cook 2 minutes.
