Pata Pochero
Pata Pochero is a tomato-based pork-leg stew with chorizo, saba, vegetables, and garbanzos.

Ingredients for Pata Pochero
- 2 1/2 lbs pork pata, parboiled for 15 minutes
- 1 Chorizo de Bilbao
- 2 saba bananas, sliced
- 2 potatoes, quartered
- 1/2 cabbage, quartered
- 10 long green beans
- 1 1/4 cups garbanzos
- 1 onion, chopped
- 1 tomato, diced
- 5 cloves garlic, chopped
- 8 oz tomato sauce
- 4 cups water
- Fish sauce, to taste
- Ground black pepper, to taste
- 3 tbsp cooking oil
How to cook Pata Pochero
- 1.Heat oil in a wok over medium heat. Sauté onion for 30 seconds, garlic for 20 seconds, then tomato until onion softens.
- 2.Add Chorizo de Bilbao and cook for 2 minutes.
- 3.Add pata, fish sauce, tomato sauce, and water. Bring to a boil, then simmer on low-medium for 1 to 1 1/2 hours until tender.
- 4.Add saba, potatoes, and garbanzos; cook for 5 to 8 minutes. Add water if necessary.
- 5.Season with pepper, then add cabbage and long beans. Cover and cook for 3 to 5 minutes before serving with rice.
