Pinatisang Manok
Pinatisang Manok is a clean, fish-sauce-seasoned chicken soup enriched with rice wash and leafy greens.

Ingredients for Pinatisang Manok
- 1 kg free-range chicken thighs and legs
- 1 litre rice wash, the water used to rinse rice
- 1 bunch spinach, malunggay leaves, or watercress
- 1 bunch chilli leaves or capsicum leaves
- 1 tbsp minced ginger
- 1 large red onion, chopped
- 6 cloves garlic, minced
- Fish sauce, to taste
- Ground black pepper, to taste
- Chopped spring onions, for garnish
- Cooking oil
How to cook Pinatisang Manok
- 1.Marinate chicken in 4 tablespoons fish sauce for 15 minutes. Heat oil in a pot and pan-fry chicken over high heat for 2 minutes per side; remove.
- 2.Sauté garlic, onion, and ginger in the pot until onions are soft. Return chicken, add rice wash, bring to a boil, then simmer 1 hour.
- 3.Add chilli leaves and spinach, malunggay, or watercress. Cover and simmer 1 minute, until leaves wilt.
- 4.Season with fish sauce and black pepper, garnish with spring onions, and serve hot.
