Tapa Frita
Tapa frita is a hearty pork, vegetable, and cheese stew in tomato sauce.

Ingredients for Tapa Frita
- 800 g pork scotch, cut into long thin strips
- 1 large potato, cut into long thin strips
- 1 large carrot, cut into long thin strips
- 1 (225 g) can green peas
- 3 tbsp pickle relish
- 1/2 cup grated processed cheese, plus more for topping
- 1 medium red onion, diced
- 2 cups chicken stock
- 1/2 cup tomato paste
- 3 large red tomatoes, diced
- 6 garlic cloves, minced
- 2 bay leaves
- 1 tsp rubbed basil
- Freshly ground black pepper
- Fish sauce, to taste
- Oil, for cooking
How to cook Tapa Frita
- 1.Heat oil in a pot over medium heat. Sauté garlic and onion until softened, then brown pork on all sides.
- 2.Add chicken stock and bay leaves. Bring to a boil, then simmer for 10 minutes.
- 3.Stir in potato, carrot, tomatoes, pickle relish, 1/2 cup cheese, basil, and tomato paste. Simmer over medium heat for 15 minutes.
- 4.Add green peas and simmer 5 minutes more, until vegetables are tender.
- 5.Season with fish sauce and black pepper. Top with additional grated cheese and serve.
