Chicken Paksiw
Chicken paksiw gives leftover chicken a savory-sour second life with vinegar, lechon sauce, aromatics, and bay leaves.

Ingredients for Chicken Paksiw
- 1 lb leftover chicken, cut into pieces
- 1 Knorr Chicken Cube
- 1 cup lechon sauce
- 5 cloves garlic, chopped
- 1 onion, chopped
- 1 tsp whole peppercorns
- 4 dried bay leaves
- 1/2 cup white vinegar
- 1/4 cup sugar
- 1 cup water
- Salt, to taste
- 3 tbsp cooking oil
How to cook Chicken Paksiw
- 1.Heat the cooking oil in a pan over medium heat, then saute the onion and garlic until the onion softens.
- 2.Add the chicken pieces and saute for 1 minute to coat them with the aromatics.
- 3.Pour in the lechon sauce and vinegar, then let the mixture come to a boil before stirring.
- 4.Add the water and bring it back to a boil.
- 5.Stir in the chicken cube, bay leaves, and whole peppercorns, then cover the pan, lower the heat to the lowest setting, and cook for 35 minutes.
- 6.Uncover and continue simmering until the sauce reduces by about half.
- 7.Add the sugar, season with salt, and stir until the sauce is balanced and glossy.
- 8.Transfer to a serving bowl and serve with warm rice.
