Kangkong Gising Gising
Kangkong Gising Gising is a fiery coconut-milk pork dish with crisp-tender kangkong stems.

Ingredients for Kangkong Gising Gising
- 400 grams kangkong stems, sliced small
- 300 grams minced pork, preferably 30% fat
- 2 tablespoons bagoong alamang
- 2 cups coconut milk
- 1/2 cup coconut cream
- 4–5 red chilies, sliced with seeds
- 4 cloves garlic, minced
- 2 small shallots, finely chopped
- Freshly ground black pepper, to taste
- Cooking oil
How to cook Kangkong Gising Gising
- 1.Sauté garlic and shallots in a little oil over medium heat until fragrant.
- 2.Add pork and stir-fry about 5 minutes until beginning to brown.
- 3.Pour in coconut milk, bring to a simmer, and cook uncovered 15 minutes until slightly reduced.
- 4.Stir in bagoong alamang and kangkong stems; cook about 2 minutes until stems soften but remain crisp.
- 5.Add coconut cream and chilies, simmer 2 minutes, season with black pepper, and serve hot with rice.
