Kadyos, Baboy at Langka
Kadyos, Baboy at Langka is a smoky, sour pork soup packed with pigeon peas and young jackfruit.

Ingredients for Kadyos, Baboy at Langka
- 1.5 kg pork leg
- 1 1/2 cups pigeon peas or black beans
- 2 cups cubed young jackfruit
- 1 bunch spinach, water spinach, or sweet potato tops
- 5 batuan or 8 tamarind fruits
- 2 lemongrass stalks, sliced
- 2 liters water
- 1 onion, chopped
- Fish sauce or sea salt, to taste
- Finger chilies
- Freshly ground black pepper, to taste
How to cook Kadyos, Baboy at Langka
- 1.If using dried pigeon peas or black beans, soak them overnight. Grill pork leg over charcoal until lightly charred on all sides.
- 2.Place pork, water, batuan or tamarind, lemongrass, and onion in a pot; bring to a boil and simmer for 30 minutes.
- 3.Add pigeon peas or beans and simmer for 30 minutes.
- 4.Add young jackfruit and simmer for another 30 minutes, until pork and jackfruit are tender.
- 5.Add greens and finger chilies; simmer 5 minutes, then season with fish sauce or salt and black pepper.
