Ginisang Bagoong
Ginisang Bagoong is a sweet, spicy sautéed shrimp paste condiment with a rich caramelized finish.

Ingredients for Ginisang Bagoong
- 2 cups raw bagoong alamang
- 1/2 packed cup brown sugar
- 2 bird's eye chillies, finely chopped
- 1 long green chilli, finely chopped
- 1 tbsp vinegar
- 1 whole head garlic, minced
- 1 small shallot, finely chopped
- Freshly ground black pepper
- Oil
How to cook Ginisang Bagoong
- 1.Quickly rinse bagoong alamang in a fine sieve under cold water, drain well, and set aside.
- 2.Heat about 3 tablespoons oil over medium heat and sauté garlic until golden.
- 3.Add shallot and cook over low heat for 1 minute.
- 4.Add brown sugar and cook until caramelized.
- 5.Stir in bagoong alamang, vinegar, bird's eye chillies, and long green chilli; stir-fry over medium heat for 5 minutes.
- 6.Add a little water if needed, cook until thick, season with black pepper, and cool before serving.
