Lechon Manok Sauce
This Lechon Manok Sauce is a smooth, tangy-sweet liver gravy made to spoon over roasted chicken.

Ingredients for Lechon Manok Sauce
- 1 lb chicken liver
- 2 cups water
- 1 medium onion, diced
- 2 tablespoons minced garlic
- 10 to 12 tablespoons white vinegar
- 8 to 10 tablespoons brown sugar
- 1 1/2 teaspoons salt
- 1/4 teaspoon ground black pepper
- 1 chicken cube, optional
- 7 to 10 tablespoons bread crumbs
- 2 tablespoons cooking oil
How to cook Lechon Manok Sauce
- 1.Heat the oven to 350°F and bake the chicken liver for 15 minutes. Let it cool, then chop it into smaller pieces.
- 2.Heat cooking oil in a pot over medium heat. Sauté the garlic and onion for about 2 minutes, until softened and fragrant.
- 3.Add the baked chicken liver and cook for 3 minutes.
- 4.Pour in the water and bring the mixture to a boil.
- 5.Blend the mixture until smooth using a hand blender, or carefully transfer it to a regular blender and puree before returning it to the pot.
- 6.Bring the sauce back to a boil, add the vinegar, and let it boil again to cook off the sharpness.
- 7.Stir in the brown sugar, salt, and ground black pepper, adjusting the seasoning as needed.
- 8.Whisk in the bread crumbs gradually and cook over medium heat, stirring often, until the sauce reaches your preferred thickness.
- 9.Add the chicken cube if using and cook for 3 minutes more. Transfer to a bowl and serve with lechon manok.
