Batangas Kaldereta
This rich Batangas Kaldereta combines tender beef with a savory, lightly spicy cheese-thickened sauce.

Ingredients for Batangas Kaldereta
- 3 lb beef chuck, cut into 1 1/2-inch cubes
- 3 red onions, chopped
- 8 cloves garlic, chopped
- 3 oz liver spread
- 2 tbsp peanut butter, optional
- 1/4 cup shredded cheddar cheese
- 3 tbsp sweet pickle relish
- 1 tsp annatto powder
- 1 tbsp beef powder
- 3 Thai chili peppers, chopped
- 1/4 cup soy sauce
- 3 tbsp Worcestershire sauce
- 4 cups water
- 3 tbsp margarine
- 2 tbsp breadcrumbs
- Salt, to taste
- Ground black pepper, to taste
How to cook Batangas Kaldereta
- 1.Mix beef with soy sauce and marinate for 30 minutes.
- 2.Melt margarine in a pot, stir in annatto powder, then sauté garlic until lightly browned and onions until soft.
- 3.Add beef and sauté, stirring often, until lightly browned all over; add Worcestershire sauce and pickle relish, then cook 2 minutes.
- 4.Add water and beef powder, bring to a boil, cover, and simmer until the beef is tender, about 60 minutes.
- 5.Stir in liver spread, optional peanut butter, cheddar, and chilies until smooth; cook over low heat for 5 minutes, stirring occasionally.
- 6.Stir in breadcrumbs, season with salt and pepper, and serve once the sauce has thickened.
