Laswa
Laswa is a light shrimp and vegetable soup with squash, saluyot, and a shell-infused broth.

Ingredients for Laswa
- 500 g large shrimp, shells on
- 1/2 small butternut squash, cubed
- 1 bunch string beans, sliced
- 2 eggplants, sliced
- 10 okra
- 1 bunch saluyot (jute leaves)
- 4 cups chicken or seafood stock
- 1 white onion, chopped
- 4 cloves garlic, minced
- Sea salt or fish sauce, to taste
- Freshly ground black pepper, to taste
- Oil, for cooking
How to cook Laswa
- 1.Peel shrimp and reserve both shrimp and shells. Briefly pulse shells with 2 cups water, then strain the liquid through a fine sieve.
- 2.Heat a little oil in a pot over medium heat. Sauté garlic and onion until the onion softens.
- 3.Add squash and string beans, then pour in stock and strained shrimp-shell liquid. Bring to a boil.
- 4.Add okra and eggplant; simmer over medium heat for about 8 minutes, until vegetables are tender.
- 5.Add shrimp and saluyot, simmer 2 minutes until shrimp turn opaque, then season with fish sauce or salt and black pepper.
