Pininyahang Manok sa Gata is tender chicken braised in pineapple and coconut milk with colorful vegetables.

- 1 1/2 pounds chicken, cut into serving pieces
- 1 14-ounce can pineapple chunks, juice reserved
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 cup coconut milk
- 1 1/2 tablespoons fish sauce
- 2 carrots, sliced diagonally
- 1 onion, diced
- 1 tomato, diced
- 1 teaspoon minced garlic
- 1/4 teaspoon ground black pepper
- 3 tablespoons cooking oil
How to cook Pininyahang Manok sa Gata (Pineapple Chicken in Coconut Milk)
- 1.Marinate chicken in the reserved pineapple juice for 30 minutes to 2 hours.
- 2.Heat oil over medium heat. Sauté onion, tomato, and garlic until fragrant, then stir in pepper.
- 3.Add chicken and brown lightly on both sides.
- 4.Pour in the pineapple marinade and bring it to a boil. Add coconut milk, cover, and simmer 40 minutes or until tender.
- 5.Stir in fish sauce and pineapple chunks; cook 5 minutes. Add carrots and cook 5 minutes more.
- 6.Add both bell peppers and cook 3 minutes, then serve.
