Pork Menudo with Bell Pepper

Pork Menudo is a tomato-based celebration stew with liver, hotdogs, and colorful vegetables.

Ingredients for Pork Menudo with Bell Pepper

  • 2 lb pork shoulder, diced
  • 10 oz pork liver, diced
  • 1 red bell pepper, cut into squares
  • 1 green bell pepper, cut into squares
  • 2 medium carrots, diced
  • 2 medium potatoes, diced
  • 4 hotdogs, sliced into 1/2-inch pieces
  • 8 oz tomato sauce
  • 2 medium onions, chopped
  • 5 cloves garlic, chopped
  • 3 dried bay leaves
  • 3 tbsp soy sauce
  • 1 tbsp beef powder
  • 1 1/2 cups cooking oil
  • 2 cups water
  • 1 tsp sugar
  • Fish sauce and ground black pepper, to taste

How to cook Pork Menudo with Bell Pepper

  1. 1.Marinate pork in soy sauce for 10 minutes. Fry carrots and potatoes over medium-high heat until beginning to brown; drain, reserving 2 tablespoons oil.
  2. 2.Sauté hotdogs for 1 to 1 1/2 minutes; set aside. Sauté half the onion with liver until lightly browned; set aside.
  3. 3.Sauté garlic until starting to brown, add remaining onion until soft, then sauté marinated pork until light to medium brown.
  4. 4.Add tomato sauce, water, bay leaves, and beef powder. Bring to a boil, cover, and simmer until pork is tender.
  5. 5.Return hotdogs and liver; cook 3 minutes. Add bell peppers, carrots, and potatoes, then cook 1 minute.
  6. 6.Stir in sugar, season with fish sauce and pepper, and serve with rice.
