Bagoong Fried Rice
Bagoong Fried Rice turns leftover rice into a savory skillet dish finished with pork, egg, and sweet mango.

Ingredients for Bagoong Fried Rice
- 2 cups pork belly, cut into small cubes
- Salt
- Freshly ground black pepper
- Sesame oil
- Oil
- Garlic, minced
- 5 cups cold leftover rice
- 2–3 tablespoons bagoong (shrimp paste)
- 3 eggs, lightly beaten
- 2 stalks spring onions, chopped
- 2 semi-ripe mangoes, sliced
How to cook Bagoong Fried Rice
- 1.Season pork with salt, pepper, and sesame oil; marinate at room temperature for at least 30 minutes.
- 2.Heat 2 tablespoons oil in a hot wok and fry pork until golden; remove.
- 3.Fry garlic in the wok until golden.
- 4.Add rice and bagoong; stir-fry 3 minutes until evenly coated. Push rice aside, scramble eggs, then mix through.
- 5.Add pork and spring onions; stir-fry 1 minute and season with salt and pepper.
- 6.Plate and top with sliced mangoes.
