Crispy Adobo Flakes
Leftover lean pork adobo turns into crisp, tangy flakes that are perfect with garlic rice and eggs.

Ingredients for Crispy Adobo Flakes
- 500 grams cooked pork adobo, preferably non-fatty pork
- 2 tablespoons vinegar
- Cooking oil, as needed
How to cook Crispy Adobo Flakes
- 1.Shred the cooked pork adobo along the grain into small, thin strands.
- 2.Heat enough cooking oil for pan-frying in a wok over medium-high heat until very hot and just starting to smoke.
- 3.Add the pork strands and cook while stirring constantly so they crisp evenly instead of clumping.
- 4.Once the pork is crisp, add the vinegar, toss well, and cook a little longer until the sharp smell fades and the flakes stay crunchy.
- 5.Remove the pork from the wok and drain in a colander or on a rack before serving.
