Puto (Steamed Rice Cake)
Soft, lightly sweet puto with coconut milk and optional anise.

Ingredients for Puto (Steamed Rice Cake)
- 2 cups rice flour
- 1/4 tsp salt
- 3/4 cup white sugar
- 2 tsp baking powder
- 2 tsp instant yeast
- 1 cup coconut milk
- 1 cup hot water
- 1 tbsp oil
- 1 tsp anise seeds, plus extra for topping (optional)
How to cook Puto (Steamed Rice Cake)
- 1.Whisk rice flour, salt, sugar, baking powder, and yeast in a large bowl.
- 2.Combine coconut milk and hot water until lukewarm; whisk into the dry ingredients with oil and optional anise seeds.
- 3.Rest batter for 10 minutes, stir gently, then divide into greased molds and rest 20 minutes.
- 4.Bring steamer water to a boil 5 minutes before steaming; use medium heat for cracked tops or low heat for smooth tops.
- 5.Cover the steamer lid with cloth and steam 15–20 minutes, until a toothpick emerges clean. Cool slightly, then unmold.
