Inihaw na Tuna Belly
Inihaw na Tuna Belly combines citrus-soy marinated tuna with a glossy garlic basting sauce.

Ingredients for Inihaw na Tuna Belly
- 1 1/2 kg tuna belly, cut into sections
- 1 cup soy sauce
- Juice of 2 lemons
- Freshly ground black pepper, to taste
- 1/3 cup soy sauce
- 1/4 cup water
- 1/3 cup packed brown sugar
- Juice of 1/2 lemon
- 2 tsp cornstarch
- 3 garlic cloves, minced
- 2 tbsp oil
How to cook Inihaw na Tuna Belly
- 1.Combine 1 cup soy sauce, juice of 2 lemons, and black pepper. Marinate tuna belly in the mixture for at least 3 hours.
- 2.For basting sauce, sauté garlic in oil over low heat. Whisk remaining soy sauce, water, brown sugar, lemon juice, and cornstarch until smooth.
- 3.Pour sauce mixture into the pan, bring to a boil, and simmer about 2 minutes until thickened.
- 4.Drain tuna and grill over charcoal for 10–15 minutes per side, depending on thickness. Baste continuously during the final 5 minutes.
- 5.Remove when cooked through and lightly charred, then serve immediately.
