Beef Morcon
Beef Morcon is a festive stuffed beef roll braised until fork-tender in tomato sauce.

Ingredients for Beef Morcon
- 2 lb beef brisket, sliced thinly to about 1/3 inch
- 1/2 cup flour, for coating
- 1/4 cup oil
- 2 garlic cloves, minced
- 1 medium onion, chopped
- 1 can diced tomatoes
- 2 cups water, plus more if needed
- 1/2 cup soy sauce
- 1/4 cup lemon or calamansi juice
- 2 medium carrots, cut into 1 cm batons
- 4 hotdogs
- 2 to 3 whole pickles, cut into 1 cm strips
- 3 hard-boiled eggs, each cut lengthwise into 4
- 80 g cheese, cut into 1 cm strips
How to cook Beef Morcon
- 1.Pound beef thin, then marinate in soy sauce and lemon or calamansi juice for at least 1 hour.
- 2.Drain and reserve marinade. Fill each beef slice with carrot, hotdog, pickle, egg, and cheese; roll tightly.
- 3.Tie rolls at 1-inch intervals, coat in flour, then sear in hot oil until browned all over.
- 4.Leave 2 tablespoons oil; sauté onion and garlic over medium heat. Add tomatoes, reserved marinade, and water; bring to a boil.
- 5.Add rolls in one layer, cover, and simmer on low for 1 to 2 hours, turning occasionally, until fork-tender; add water if needed.
- 6.Remove rolls and reduce sauce until thick. Remove twine, slice, and serve with sauce.
