Bulalo Pares
Bulalo Pares pairs fall-apart beef shanks with a sweet, deeply savory soy-anise sauce.

Ingredients for Bulalo Pares
- 1.5 kg beef leg shanks
- 4 cups beef stock
- 2 cups water
- 1/3 cup soy sauce
- 6 tbsp brown sugar
- 3 star anise
- 2 dried bay leaves
- 2 tbsp cornstarch mixed with 4 tbsp water
- 1 tsp ground black pepper
- 1 red onion, minced
- 8 garlic cloves, minced
- Fish sauce, to taste
- Oil
- Fried garlic, for garnish
- Chopped spring onions, for garnish
How to cook Bulalo Pares
- 1.Heat oil in a pot and sauté garlic and onion until fragrant.
- 2.Add beef shanks and brown all sides.
- 3.Add stock, water, soy sauce, brown sugar, star anise, bay leaves, pepper, and cornstarch slurry; bring to a boil.
- 4.Lower heat and simmer about 1 1/2 hours, until beef is nearly falling apart.
- 5.Season with fish sauce to taste.
- 6.Garnish with fried garlic and spring onions; serve with garlic fried rice and clear beef soup.
