Ginarep
Ginarep is a clean, sweet corn and prawn soup enriched by a shell-infused broth.

Ingredients for Ginarep
- Oil
- 250 g prawns, shelled and deveined; heads and shells reserved
- 2 cups water
- 4 cups chicken stock
- 3 large ears corn, kernels removed; cobs reserved
- 6 cloves garlic, minced
- 1 white onion, finely chopped
- 1 large tomato, diced
- 1 cup malunggay leaves
- Fish sauce, to taste
- White pepper, to taste
How to cook Ginarep
- 1.Heat oil in a pot; fry prawn heads and shells, crushing the heads, until toasted and fragrant.
- 2.Add water, chicken stock, and corn cobs; boil, then simmer gently for 15 minutes.
- 3.In another pot, sauté garlic and onion in oil; add tomato and cook until soft.
- 4.Strain the prawn-corn broth into the tomato pot; add corn kernels, boil, and simmer 15 minutes.
- 5.Add prawns for 3 minutes, then malunggay for 1 minute; season with fish sauce and white pepper.
