Sinarsahang Manok
Sinarsahang Manok is a rich tomato-braised chicken dish with colorful vegetables and a subtly sweet sauce.

Ingredients for Sinarsahang Manok
- 10 chicken legs, about 1.3–1.5 kg
- 1 large carrot, sliced
- 1 red capsicum, sliced
- 150 g sugar snap peas
- 1/2 cup green peas
- 2 tbsp liver spread, optional
- 3 tbsp soy sauce
- 400 g tomato sauce
- 3 tbsp tomato paste
- 1 cup 7-Up or Sprite
- 1 onion, chopped
- 6 garlic cloves, minced
- Salt, to taste
- Freshly ground black pepper, to taste
- Oil, for cooking
How to cook Sinarsahang Manok
- 1.Heat a little oil in a pan and flash-cook the capsicum, sugar snap peas, and green peas for 45 seconds. Set them aside.
- 2.Add more oil to a large pot. Brown the chicken over medium-high heat for roughly 3 minutes on each side, then transfer it out.
- 3.Cook the garlic and onion in the same pot until fragrant and the onion turns translucent.
- 4.Add the soy sauce, tomato sauce, and soda. Once gently bubbling, put the chicken back in, cover, and simmer over medium heat for 20 minutes.
- 5.Mix in the tomato paste and liver spread, if using. Leave uncovered and simmer until the sauce becomes thick and full-bodied.
- 6.Fold in the reserved vegetables and cook for 2 minutes to warm through. Season with salt and black pepper, then serve with rice.
