Chicken Adobo with Pineapples

Ingredients for Chicken Adobo with Pineapples
- 1 kilogram chicken wings
- 1 225-gram can pineapple chunks in syrup, syrup reserved
- 1 whole garlic, minced
- 2 tablespoons sugar
- 1/2 cup water
- 1/2 cup vinegar
- 1/2 cup Philippine soy sauce
- 1 teaspoon cornstarch, diluted in 3 tablespoons water
- 4 bay leaves
- 2 tablespoons whole peppercorns
- Oil
How to cook Chicken Adobo with Pineapples
- 1.Sauté garlic in oil over low heat until golden; remove and reserve. Fry chicken wings until browned all over.
- 2.Add water, vinegar, soy sauce, reserved pineapple syrup, peppercorns, bay leaves, and sugar. Boil, then simmer 25 minutes.
- 3.Drain the braising liquid into a heatproof container. Cook chicken until dry and frying in its own oil, about 5 minutes.
- 4.Whisk diluted cornstarch into the reserved liquid, then return it to the wok with pineapple chunks.
- 5.Simmer 5 minutes until the sauce thickens. Top with fried garlic and serve.
