Ensaladang Talbos ng Kamote
A bright talbos ng kamote salad balances tangy dressing, salted egg, and crisp dilis.

Ingredients for Ensaladang Talbos ng Kamote
- 1 large bunch kamote leaves (sweet potato leaves)
- 1 salted duck egg, roughly chopped
- 1/2 cup crispy fried dilis (dried anchovies)
- 12 cherry tomatoes, halved
- 1 small red onion, thinly sliced
- 1/4 cup cane vinegar
- 1 teaspoon fish sauce
- 1 teaspoon olive oil
- 1 teaspoon sugar
- Salt, to taste
- Freshly ground black pepper, to taste
How to cook Ensaladang Talbos ng Kamote
- 1.Pick leaves from stems, rinse under cold water, and drain well.
- 2.Steam leaves for about 2 minutes until wilted, or blanch in boiling water for 30 seconds.
- 3.Plunge leaves into iced water for 30–40 seconds, then drain thoroughly.
- 4.Combine leaves, duck egg, tomatoes, and red onion in a bowl.
- 5.Whisk vinegar, fish sauce, olive oil, sugar, salt, and pepper. Toss with the salad, top with dilis, and serve.
