Adobo Rice
Adobo Rice is a quick garlic fried rice that makes excellent use of leftover pork adobo.
20 minutes · Serves 4
Ingredients for Adobo Rice
- 1/2 lb pork adobo, chopped
- 4 cups leftover white rice, preferably day-old
- 1 head garlic, crushed
- 2 tbsp oyster sauce
- 3 stalks green onions, chopped, white and green parts separated
- 3 tbsp cooking oil
- Salt and ground black pepper, to taste
How to cook Adobo Rice
- 1.Heat oil over medium heat. Cook garlic until golden, then remove about three quarters for topping.
- 2.Add the white green-onion parts and sauté for 20 seconds.
- 3.Add rice and stir-fry 2 minutes, breaking up clumps. Stir in oyster sauce and cook 1 minute.
- 4.Add pork adobo and stir-fry 2 to 3 minutes, until heated through. Season with salt and pepper.
- 5.Toss in green onion tops and reserved garlic. Transfer to a serving plate.
