Monay Bread
Monay Bread is a soft, dense Filipino milk bread with its characteristic split top.

Ingredients for Monay Bread
- 4 cups bread flour or all-purpose flour
- 1/2 cup milk powder
- 2/3 cup sugar
- 1/2 teaspoon salt
- 3/4 cup lukewarm water, plus more as needed
- 1 teaspoon instant yeast
- 1/4 cup unsalted butter or margarine, softened
- 1 medium egg
- 2 tablespoons milk or evaporated milk, for brushing
How to cook Monay Bread
- 1.Mix flour, milk powder, sugar, and salt. Make a well, add lukewarm water, sprinkle in yeast, and stir to moisten.
- 2.Add butter and egg, then mix into a dense dough. Knead 8 to 10 minutes until smooth and elastic, adding water by tablespoons only if dry.
- 3.Place dough in a greased bowl, cover, and let rise in a warm place for 1 hour.
- 4.Deflate gently, divide into 8 balls, rest 5 to 10 minutes, then arrange on a baking tray.
- 5.Cut a deep crosswise slit halfway down each ball. Cover and proof 30 minutes, until cuts open slightly.
- 6.Bake at 160°C for 15 minutes for light brown or 20 minutes for golden brown. Brush hot rolls with milk.
