Spicy Garlic Pusit
Baby squid is briefly cooked in a buttery, spicy garlic sauce with a thick glossy finish.

Ingredients for Spicy Garlic Pusit
- 700 g baby squid, scored
- Water, for blanching
- 1 whole garlic, crushed
- 2 red chilies, finely chopped
- 3 tablespoons oyster sauce
- 3 tablespoons banana ketchup
- 1 tablespoon brown sugar
- 1/3 cup squid blanching water
- 2 teaspoons cornstarch
- 60 g butter
- Crunchy garlic, for garnish
- Chili garlic oil, for serving
- Chopped spring onion, for garnish
How to cook Spicy Garlic Pusit
- 1.Bring water to a boil. Blanch scored baby squid for 1 minute, then immediately remove and reserve 1/3 cup blanching water.
- 2.Melt butter in a wok over medium heat. Sauté crushed garlic until fragrant and golden.
- 3.Add oyster sauce, banana ketchup, brown sugar, and red chilies; cook briefly to combine.
- 4.Whisk cornstarch into reserved blanching water. Add to wok, bring to a boil, then simmer 5 minutes until thickened.
- 5.Add squid and cook 1–2 minutes, just until tender and cooked through.
- 6.Garnish with spring onion and crunchy garlic; serve with chili garlic oil.
