Kimchi Beef Sinigang
Kimchi Beef Sinigang gives classic tamarind soup a spicy, fermented depth.

Ingredients for Kimchi Beef Sinigang
- 1 kg beef brisket, cubed
- 500 g kimchi, with juices
- 200 g enoki mushrooms
- 150 g baby spinach
- 2 tablespoons gochujang
- 1 large red onion, chopped
- 1 packet sinigang (tamarind) mix or 400 g tamarind
- water, as needed
- fish sauce, to taste
- freshly ground black pepper, to taste
How to cook Kimchi Beef Sinigang
- 1.Put brisket and onion in a large pot. Add tamarind in tied muslin, if using, and enough water to barely cover the meat.
- 2.Bring to a boil, then simmer over low heat for about 1 1/2 hours until beef is tender.
- 3.Add gochujang and kimchi with juices; return to a boil, then simmer 15 minutes.
- 4.Stir in sinigang mix, or press tamarind through a colander into the pot and discard solids.
- 5.Add enoki and cook 5 minutes. Stir in spinach until wilted, season with fish sauce and pepper, then serve.
