Inun-unan
Inun-unan gently braises milkfish and vegetables in a bright cane-vinegar broth.

Ingredients for Inun-unan
- 2 milkfish, scaled and cut into 1 1/2-inch pieces
- 3 Asian eggplants
- 12 okra, trimmed
- 1 red onion, sliced
- 1 head garlic, halved crosswise
- 1 thumb-sized piece ginger, thinly sliced
- 6 long green or red chillies
- 1 cup cane vinegar
- 1/2 cup water
- 1 teaspoon whole peppercorns
- Salt, to taste
How to cook Inun-unan
- 1.Arrange milkfish, eggplants, okra, onion, garlic, ginger, chillies, vinegar, water, peppercorns, and salt in a pot.
- 2.Cover and slowly bring to a boil over medium heat.
- 3.Lower heat and simmer gently for 15 minutes, until fish is cooked through and vegetables are tender.
- 4.Turn off heat and serve at room temperature.
