Ube Halaya
Ube Halaya is a silky, intensely purple yam dessert finished with buttery latik.

Ingredients for Ube Halaya
- 750 g grated ube
- 1 can (375 ml) evaporated milk
- 1 can (400 ml) coconut milk
- 1 can (395 g) condensed milk
- ½ cup white sugar
- ½ teaspoon sea salt
- ½ cup butter, melted
- 2 teaspoons ube flavoring
- Latik, for topping
How to cook Ube Halaya
- 1.Combine grated ube, evaporated milk, coconut milk, condensed milk, sugar, salt, melted butter, and ube flavoring in a large nonstick pan.
- 2.Cook over medium heat, stirring constantly, until boiling.
- 3.Lower to medium-low and stir continuously for 35–45 minutes, until thick enough to hold a dough-like shape.
- 4.Divide into 3 butter-greased llaneras or 6 individual pie pans. Smooth, cool, and top generously with latik.
