Ube Halaya (Purple Yam Jam)
Ube halaya is a rich purple yam jam cooked until glossy, thick, and spoonable.

Ingredients for Ube Halaya (Purple Yam Jam)
- 1 lb purple yam, fresh or frozen, peeled and cubed
- 1 (10 fl oz) can sweetened condensed milk
- 1 (13.5 fl oz) can coconut milk
- 1 (12.5 fl oz) can evaporated milk
- ¾ cup butter
- ½ cup sugar
How to cook Ube Halaya (Purple Yam Jam)
- 1.Melt butter in a wide, deep pan over medium heat. Add ube and coconut milk, bring to a boil, and cook 15 minutes.
- 2.Blend the cooked ube mixture until very smooth, using a blender or immersion blender.
- 3.Return it to the pan with condensed milk, evaporated milk, and sugar. Simmer over medium-low heat, stirring regularly, 20–30 minutes.
- 4.Cook until very thick, heavy, and pulling away from the pan sides when stirred.
- 5.Butter 2–3 llanera, fill them, cool, then chill at least 2 hours. Top with latik or grated cheese.
