Tinapa Fried Rice (Smoked Fish Fried Rice)
Tinapa fried rice turns leftover rice into a smoky breakfast or easy meal.

Ingredients for Tinapa Fried Rice (Smoked Fish Fried Rice)
- 4 cups leftover white rice
- 3/4 to 1 cup tinapa flakes
- 2 salted duck eggs, sliced
- 2 medium plum tomatoes, cubed
- 1/2 cup green onions, chopped
- 6 garlic cloves, crushed
- 1 tsp salt
- 4 to 5 tbsp cooking oil
- Ground black pepper, to taste
How to cook Tinapa Fried Rice (Smoked Fish Fried Rice)
- 1.Toss leftover rice with salt and set aside.
- 2.Heat oil in a large pan over medium heat. Cook garlic until lightly browned, then add tinapa flakes and cook 3 minutes.
- 3.Add rice and stir-fry 2 to 5 minutes until evenly combined and heated through.
- 4.Add black pepper and green onions; stir-fry 3 to 5 minutes more.
- 5.Plate the rice and top with sliced salted duck eggs and cubed tomatoes.
