Adobo sa Puti
Adobo sa Puti is a vinegar-forward pork belly adobo with crisp potatoes.

Ingredients for Adobo sa Puti
- 800 g pork belly, cubed
- 3 medium Agria potatoes, quartered
- 1 whole garlic, minced
- ½ cup Filipino-style cane vinegar
- 1 tbsp sugar
- 1 tbsp salt
- Oil, for frying
- Bay leaves
- Whole peppercorns
- Water
How to cook Adobo sa Puti
- 1.Season pork belly with salt. Deep-fry potatoes until golden, then drain and set aside.
- 2.Sauté garlic in oil over low heat until golden; remove and reserve.
- 3.Fry pork belly in the same pot until browned.
- 4.Add ½ cup water, vinegar, 2 tbsp peppercorns, 4 bay leaves, and sugar. Bring to a boil, then simmer 25 minutes.
- 5.Drain and reserve the liquid; fry pork over high heat until browned on the edges. Return liquid and potatoes, adding vinegar or water if needed.
- 6.Simmer 5 minutes, adjust salt, and serve topped with the reserved garlic.
