Monggo with Hibi (Mung beans with small dried shrimp)
Simple but flavorful monggo enriched with hibi and spinach.

Ingredients for Monggo with Hibi (Mung beans with small dried shrimp)
- 1 cup uncooked mung beans
- 2-2 1/2 tbsp hibi, small dried shrimp
- 1 bunch fresh spinach
- 3 tbsp patis
- 5 1/2 cups water
- 1 medium onion, chopped
- 5 cloves garlic, crushed
- 3 medium ripe tomatoes, cubed
- 3 tbsp cooking oil
- 1/4 tsp ground black pepper
How to cook Monggo with Hibi (Mung beans with small dried shrimp)
- 1.Boil the mung beans in 4 cups water until the water is absorbed and the beans are tender.
- 2.In a separate pot, heat the oil and sauté the garlic, onion, and tomatoes until softened.
- 3.Add the hibi and cooked mung beans; mix well.
- 4.Pour in the remaining 1 1/2 cups water, bring to a boil, cover, and cook for 10 minutes.
- 5.Add the spinach and cook for 3 minutes, then season with patis and pepper; cook for 2 more minutes.
