3 pork chops, about 6 to 8 ounces each
1 teaspoon garlic powder
1 teaspoon salt
1/2 teaspoon ground black pepper
3/4 cup ripe mango, cubed
1 red onion, minced
1 red bell pepper, chopped
1/2 cup jicama or singkamas, cubed
1 jalapeno pepper, chopped
2 tablespoons chopped cilantro
2 tablespoons lime juice
Salt and ground black pepper, to taste
How to cook Grilled Pork Chop with Mango Salsa
1.In a bowl, combine the mango, red onion, red bell pepper, jicama, jalapeno, cilantro, and lime juice. Season with salt and ground black pepper, mix gently, and refrigerate while the pork rests.
2.In a separate small bowl, stir together the garlic powder, 1 teaspoon salt, and 1/2 teaspoon ground black pepper.
3.Rub the seasoning mixture evenly over the pork chops and let them stand for 15 to 30 minutes.
4.Heat a grill or grill pan to medium heat. Grill the pork chops for 6 to 8 minutes per side, until browned outside and fully cooked through without drying them out.
5.Plate the pork chops and serve with the chilled mango salsa on the side.
