Pinakupsan
Pinakupsan slowly renders pork belly until it fries crisp in its own fat.

Ingredients for Pinakupsan
- 1 kg fatty pork belly, cubed
- 2 tsp salt
- 2 tbsp vinegar
- Freshly ground black pepper
- 1 cup water
How to cook Pinakupsan
- 1.Place pork, salt, vinegar, black pepper, and water in a wok. Bring to a boil, cover, and simmer on low for 20 minutes.
- 2.Uncover and cook until the water evaporates and pork fat begins to render, about 15 to 20 minutes.
- 3.Continue frying the pork in its rendered fat, stirring occasionally, until crisp and golden brown.
- 4.Lift pork out with a slotted spoon, drain on paper towels, and serve.
