Ginataang Labong
Creamy ginataang labong with pork belly and gentle chilli heat.

Ingredients for Ginataang Labong
- 2 cups sliced bamboo shoots
- 2 cups coconut milk
- 1/2 cup coconut cream
- 150 g pork belly, small cubes
- 3 red chillies, finely chopped
- 1 large onion, chopped
- 4 cloves garlic, chopped
- 1 tbsp ginger, chopped
- Fish sauce, to taste
- Freshly ground pepper
- Oil
How to cook Ginataang Labong
- 1.If the bamboo shoots are not fresh, boil them in water for 30 minutes until tender. Drain, cool, and squeeze dry.
- 2.Heat oil in a pan and sauté the garlic, ginger, chillies, and onion until fragrant.
- 3.Add the pork belly and cook until browned on all sides.
- 4.Stir in the bamboo shoots and coconut milk. Bring to a boil, then simmer over medium heat for 30 minutes until the liquid has reduced.
- 5.Add the coconut cream, fish sauce, and pepper. Simmer gently for 5 minutes and serve with rice.
