Tinolang Tahong
Tinolang Tahong is a quick mussel soup with ginger, garlic, onion, and leafy greens in a light savory broth.

Ingredients for Tinolang Tahong
- 1 kg mussels, cleaned
- 1 thumb-sized ginger, julienned
- 1 large onion, chopped
- 6 cloves garlic, minced
- 1 bunch chili leaves, or substitute moringa leaves or spinach
- Fish sauce, to taste
- Freshly ground black pepper, to taste
- Cooking oil, for sauteing
- 3 to 4 cups water
How to cook Tinolang Tahong
- 1.Heat a little cooking oil in a pot over medium heat, then saute the garlic, ginger, and onion until aromatic and the onion softens.
- 2.Add the cleaned mussels and pour in 3 to 4 cups water. Increase the heat and bring to a boil.
- 3.Cover the pot, lower to a simmer, and cook until the mussel shells open. Discard any mussels that stay closed.
- 4.Add the chili leaves and simmer for 2 more minutes, just until the leaves wilt.
- 5.Season with fish sauce and freshly ground black pepper, then serve hot.
