Beef Sinina
Beef Sinina is a slow-cooked coconut beef dish with a spicy ginger-and-spring-onion palapa.

Ingredients for Beef Sinina
- 1 kg beef brisket, cubed
- 1 1/2 cups coconut milk
- 1/2 cup beef stock
- 3 tbsp soy sauce
- 6 bird's-eye chillies, chopped
- 1 thumb-sized ginger, thinly sliced
- 1 red onion, thinly sliced
- 6 cloves garlic, minced
- 2 large tomatoes, quartered
- Freshly ground black pepper, to taste
- Salt, to taste
- Oil, for cooking
- 4 stalks spring onions, finely chopped
- 2 tbsp ginger paste
- 2 bird's-eye chillies, finely chopped
How to cook Beef Sinina
- 1.Pound spring onions, ginger paste, and 2 finely chopped bird's-eye chillies in a mortar until a rough palapa paste forms; set aside.
- 2.Heat oil in a pot over medium heat. Sauté garlic, sliced ginger, and onion until softened; add tomatoes and cook until they break down.
- 3.Add beef and brown all over. Pour in coconut milk and beef stock, bring to a boil, then cover and simmer over low heat for 1 hour.
- 4.Stir in soy sauce and 6 chopped chillies. Continue simmering over low heat for 45 minutes, until the brisket is tender.
- 5.Raise heat to high, stir in palapa, and reduce the liquid by half until thickened. Season with salt and black pepper before serving.
