Guiso
Guiso is a hearty tomato-and-pickle pork and chicken stew with hotdogs and liver.

Ingredients for Guiso
- 450 g pork belly, skin and fat on, cubed
- 450 g chicken thighs, cubed
- 100 g pork liver, thinly sliced
- 200 g hotdogs, sliced
- 400 g chopped tomatoes
- 1 cup pickle juice
- 3 whole pickles, sliced
- 1 large red onion, chopped
- 6 cloves garlic, minced
- 3 bay leaves
- Salt, to taste
- Freshly ground black pepper, to taste

How to cook Guiso
- 1.Heat oil in a pot over medium heat and brown pork belly on all sides, about 15 minutes. Remove and set aside.
- 2.Sauté onion and garlic in the same pot until the onion softens.
- 3.Add chicken and browned pork; cook for 5 minutes, stirring continuously.
- 4.Add hotdogs, pickles, bay leaves, tomatoes, and pickle juice. Cover and simmer on medium-low for 30 minutes, stirring occasionally.
- 5.Stir in pork liver and cook on medium-low for 15 minutes, until cooked through. Season with salt and black pepper.
