Nagmamantikang Pork Adobo
Pineapple-marinated pork adobo cooks down until its own fat glistens.

Ingredients for Nagmamantikang Pork Adobo
- 1 1/2 lb pork belly, cubed
- 3/4 cup pineapple juice
- 8 garlic cloves, crushed
- 3 tablespoons soy sauce
- 5 tablespoons white vinegar
- 4 teaspoons fish sauce
- 3 dried bay leaves
- 1/2 teaspoon cracked peppercorns
- 2 tablespoons cooking oil
How to cook Nagmamantikang Pork Adobo
- 1.Mix pork and pineapple juice; marinate for at least 3 hours. Separate pork from marinade and reserve the liquid.
- 2.Heat oil and sauté garlic until beginning to brown. Add pork and cook until lightly browned outside.
- 3.Add soy sauce, bay leaves, and peppercorns; stir for 2 minutes.
- 4.Add vinegar and reserved marinade, bring to a boil, cover, and cook on low until pork is tender.
- 5.Uncover, stir in fish sauce, and cook over medium heat until the sauce evaporates and pork renders fat. Serve with rice.
