Adobo de Campesino
Adobo de Campesino is browned pork and crisp-tender beans in a deeply savory vinegar sauce.

Ingredients for Adobo de Campesino
- Oil
- 1 whole garlic, minced
- 1 tablespoon annatto powder
- 750 g pork belly, cubed
- 1/3 cup water, plus a little more if needed
- 1/3 cup vinegar
- 3 tablespoons fish sauce
- 4 bay leaves
- 2 tablespoons whole peppercorns
- 250 g green beans (bitsuelas), sitaw, or sigarilyas, trimmed
How to cook Adobo de Campesino
- 1.Sauté garlic in oil over low heat until golden; remove and reserve.
- 2.Stir-fry annatto powder briefly in the oil until it colors the oil red.
- 3.Raise heat to high, add pork, and fry until browned on all sides.
- 4.Add water, vinegar, fish sauce, bay leaves, and peppercorns; boil, then simmer on low for 45 minutes.
- 5.Cook over medium heat until the liquid nearly dries and pork begins frying again; add beans and stir-fry 5 minutes.
- 6.Add a little water and simmer 5 minutes, until beans are tender; top with reserved garlic and serve.
