Sinampalukang Kambing
Sinampalukang Kambing is a sour tamarind goat soup with ginger, leeks, and green chilies.

Ingredients for Sinampalukang Kambing
- 2 lb goat meat (chevon), chopped
- 2 cups buttermilk
- 3/4 lb unripe tamarind
- 1 medium yellow onion
- 1/4 cup sliced ginger
- 6–8 cups water
- 1/2 cup leeks or green onion, chopped
- 4–6 long green chilies
- 2 tbsp fish sauce
How to cook Sinampalukang Kambing
- 1.Soak goat meat in buttermilk overnight. Rinse thoroughly under running water and drain.
- 2.Bring water to a boil in a pot. Add goat, tamarind, onion, and ginger.
- 3.Simmer 60–90 minutes, skimming foam and adding water as needed, until goat is tender.
- 4.Remove tamarind and ginger. Add leeks and green chilies; cook 5 minutes.
- 5.Stir in fish sauce, cook 2 minutes more, and serve hot.
