Sinantomas is a comforting Quezon-style pork stew with pineapple, tomato, sweet potatoes, peas, peppers, and cheese in a savory-sweet sauce.

Ingredients for Sinantomas
1 kg pork spareribs, cut into sections
2 medium sweet potatoes, cubed
1 cup green peas
1 large green capsicum, sliced
2 cups pineapple juice
2 cups chicken stock
1/4 cup tomato sauce
1/4 cup tomato catsup
1 head garlic, minced
2 onions, chopped
3 tomatoes, chopped
1/2 cup grated cheddar cheese
4 tablespoons soy sauce
3 tablespoons fish sauce, plus more to season
Freshly ground black pepper, to taste
Oil, for sauteing
How to cook Sinantomas
1.In a large bowl or container, combine the pork spareribs, pineapple juice, soy sauce, and 3 tablespoons fish sauce. Cover and marinate for at least 2 hours.
2.Heat oil in a pot over medium heat. Saute the garlic and onions until fragrant, then add the tomatoes and cook for about 2 minutes, until softened.
3.Add the pork together with all the marinade, then pour in the chicken stock. Bring to a boil, lower the heat, cover partially, and simmer for about 45 minutes, or until the ribs are becoming tender.
4.Add the sweet potatoes, green peas, green capsicum, tomato sauce, and tomato catsup. Continue simmering for 10 to 15 minutes, until the sweet potatoes are tender but not falling apart.
5.Stir in the grated cheddar cheese until melted into the sauce. Taste and adjust with more fish sauce if needed, then finish with freshly ground black pepper and serve hot.
