Adobong Sitaw with Lechon Kawali
Adobong Sitaw with Lechon Kawali crowns tangy braised snake beans with crackly fried pork belly.

Ingredients for Adobong Sitaw with Lechon Kawali
- 12 snake beans (sitaw), cut into 2-inch pieces
- 8 oz pork belly, cubed
- 5 cloves garlic, crushed
- 1 medium onion, sliced
- 3 tbsp soy sauce
- 2 1/2 tbsp vinegar
- 4 cups water
- 2 tsp onion powder
- 1 1/2 tsp salt
- 1/2 tsp ground black pepper
- 1 1/2 cups cooking oil
How to cook Adobong Sitaw with Lechon Kawali
- 1.Boil pork belly in 4 cups water, covered over medium heat, for 30 minutes. Cool pork and reserve 1 cup cooking liquid.
- 2.Season pork with salt and 1/4 teaspoon pepper. Fry in hot oil until light brown and crisp; drain.
- 3.Heat 3 tablespoons frying oil and sauté garlic and onion until fragrant.
- 4.Add sitaw and stir-fry for 2 minutes. Add soy sauce and reserved pork liquid; cook 5–8 minutes.
- 5.Add vinegar and bring back to a boil. Stir in onion powder and remaining pepper.
- 6.Transfer sitaw to a bowl and top with crispy lechon kawali.
