Bagis
Bagis is a bright, fiery minced-beef dish sharpened with calamansi.

Ingredients for Bagis
- 500 g minced beef, 15% fat
- 1/2 cup calamansi juice or lemon juice
- 1 cup beef stock
- 6 bird's-eye chillies, minced
- 1 white onion, finely chopped
- 6 cloves garlic, minced
- Sliced red chillies, for garnish
- Fish sauce
- Freshly ground black pepper
- Oil
How to cook Bagis
- 1.Heat oil in a wok over medium heat. Sauté garlic and onion until the onion softens.
- 2.Add bird's-eye chillies and stir-fry for 30 seconds.
- 3.Add beef and stir-fry until lightly browned. Add stock and a little fish sauce; bring to a boil.
- 4.Reduce to medium heat and simmer 15–20 minutes, until beef is tender and liquid is reduced.
- 5.Stir in calamansi juice and simmer 5 minutes. Season with fish sauce and pepper, garnish with red chillies, and serve.
