Pesa (Fish in Miso Soup)
Pesa is a light, comforting fish soup enriched with yellow miso, greens, and rice wash.

Ingredients for Pesa (Fish in Miso Soup)
- 1 1/2 kg white, fleshy fish with bone and head
- 1/2 small cabbage, chopped
- 3 bunches pak choy
- 1 leek, sliced
- 4 large tomatoes, chopped
- 1 large red onion, chopped
- 4 cloves garlic, minced
- 1 thumb-size ginger, thinly sliced
- 1/4 cup yellow miso
- 1 teaspoon peppercorns
- Fish sauce, to taste
- 6 cups rice wash
- 8 nori squares, 1 inch each
- Salt
- Freshly ground black pepper
- Oil
How to cook Pesa (Fish in Miso Soup)
- 1.Season fish with salt and pepper. Lightly fry in very hot oil, then remove and reserve some oil.
- 2.Sauté garlic and red onion in reserved oil over medium heat until soft. Add ginger and tomatoes; cook until tomatoes soften.
- 3.Add rice wash, yellow miso, and peppercorns; bring to a boil.
- 4.Add fish, return gently to a boil, and simmer 4 minutes. Add pak choy, cabbage, leek, and nori; simmer 4 minutes more.
- 5.Season with fish sauce to taste and serve hot.
