Kare-Kare (Beef Tripe)
This rich Kare-Kare pairs tender beef tripe with peanut sauce and fresh vegetables.

Ingredients for Kare-Kare (Beef Tripe)
- 2 lb beef tripe, sliced
- 1 Knorr Beef Cube
- 1 bunch baby bok choy
- 15 snake beans, cut into 2-inch pieces
- 1 Chinese eggplant, sliced
- 1 1/2 cups peanuts, processed smooth and creamy
- 1/2 cup annatto seeds
- 1 onion, minced
- 5 cloves garlic, minced
- 1 1/2 tbsp glutinous rice flour
- 6 cups water
- 3 tbsp cooking oil
- Ground black pepper
- Shrimp paste (bagoong alamang), to taste
How to cook Kare-Kare (Beef Tripe)
- 1.Boil tripe in 4 cups water for 1 hour. Drain, discard the cooking water, and set tripe aside.
- 2.Boil annatto seeds in 1 1/2 cups water for 2 minutes; set aside. Heat oil and sauté onion and garlic until softened.
- 3.Add tripe and sauté 1 minute. Strain annatto water into the pot and bring to a boil.
- 4.Add Beef Cube, peanut paste, and remaining water. Boil 8 minutes, then stir in rice flour mixed with 1/4 cup water until thickened.
- 5.Add snake beans and eggplant; cook 5 minutes. Add bok choy for 1 minute, season with pepper, and serve with bagoong alamang.
