Sinigang sa Ube
Sinigang sa Ube brings purple yam's earthy sweetness to a tangy pork tamarind soup.

Ingredients for Sinigang sa Ube
- 1 kg pork belly, cubed
- 200 g medium okra, halved
- 1 bunch kangkong or other leafy vegetables
- 3 cups cubed ube (purple yam)
- 1/2 daikon radish, sliced
- 1 large red onion, roughly chopped
- 1 packet sinigang tamarind mix or 400 g tamarind
- 2 medium tomatoes, chopped
- 3 green finger chilies
- Water
- Fish sauce, to taste
- Freshly ground black pepper, to taste
How to cook Sinigang sa Ube
- 1.Place pork, onion, and tomatoes in a pot; add enough water to barely cover pork. Bring to a boil, then simmer 30 minutes.
- 2.If using whole tamarind, tie it in muslin and simmer it with the pork.
- 3.Add ube and daikon, then simmer for another 30 minutes until tender.
- 4.Stir in sinigang mix, or squeeze juice from the tamarind pouch into the soup and discard the solids.
- 5.Add chilies and okra and cook for 5 minutes. Add kangkong, cover, and turn off heat.
- 6.Season with fish sauce and black pepper before serving.
