Dinoydoy
Dinoydoy pairs crisp pork belly with softened squash and pleasantly bitter ampalaya.

Ingredients for Dinoydoy
- 1 large bitter melon, sliced
- 1/2 small butternut squash
- 200 g pork belly, thinly sliced
- 2 cups chicken stock
- 1 onion, finely chopped
- 6 cloves garlic, chopped
- 1 tomato, chopped
- Fish sauce, to taste
- Freshly ground black pepper, to taste
- Cooking oil
How to cook Dinoydoy
- 1.Heat oil in a wok over medium heat and sauté garlic and onion until fragrant.
- 2.Add pork belly and brown on all sides until crisp.
- 3.Add tomato and cook for 2 minutes.
- 4.Pour in chicken stock, add squash, and simmer for 15 to 20 minutes until the squash starts breaking down.
- 5.Add bitter melon and cook for about 5 minutes until tender. Season with fish sauce and black pepper.
