Gourmet Tuyo (dried Herring) in Spicy Oil
Gourmet Tuyo turns crisp dried herring into a spicy, aromatic oil-packed rice companion.

Ingredients for Gourmet Tuyo (dried Herring) in Spicy Oil
- 15–20 pieces tuyo, dried herring
- Vegetable oil, for frying
- 1 cup olive oil, sunflower oil, or corn oil
- 3 cloves garlic, thinly sliced
- 1 red labuyo, sliced, or 1 teaspoon chili flakes
- 3 bay leaves
- 5–10 peppercorns, lightly crushed
- 10–20 pickled olives, sliced, optional
- 1 teaspoon paprika
How to cook Gourmet Tuyo (dried Herring) in Spicy Oil
- 1.Remove the tuyo heads and fry in hot vegetable oil over high heat until scales loosen; drain on paper towels.
- 2.Remove scales and soft portions, then debone or flake the fish as desired and pack it into a clean glass jar.
- 3.Combine the chosen oil, garlic, chili, bay leaves, peppercorns, and olives in a saucepan over medium-high heat.
- 4.Bring to a brief boil, add paprika, and cook until garlic is tender and lightly browned.
- 5.Pour the hot oil mixture over the tuyo, cool completely, then refrigerate at least 3 days before serving with hot rice.
